From centuries In India, highways are dotted with local restaurants populary known as dhaba. They generally serve local cuisine.
Dhabas were characterized by mud structures and cots to sit upon (called 'chaarpai' in Hindi) while eating. A wooden plank would be placed across the width of the cot on which to place the dishes.
With time, the cots were replaced by tables. The food is typically fresh with local produce and has a 'homemade' feel to it. The food is cooked in clay ovens called "Tandoori" in the traditional style of the Indian north-west frontier region.
